Creamy Rotisserie Chicken Noodle Soup

My schedule is crazy this week, and I am looking for all the shortcuts! I love Creamy Rotisserie Chicken Noodle Soup cause its easy, delicious, and comes together in 30 minutes!

Ingredients

  • 2 tbsp olive oil

  • 1 onion - diced

  • 3 stalks celery - diced

  • 1 cup baby carrots - diced

  • 2-3 cloves of garlic - minced

  • 6 cups of chicken broth

  • Rotisserie chicken

  • 1 tsp dried thyme

  • ½ tsp poultry seasoning

  • ½ tsp garlic and onion powder

  • ½ tsp salt and pepper

  • 3 cups cooked egg noodles

  • 1.5 cups heavy whipping cream

  • 2 tbsp cream cheese

Directions

  1. Heat oil in a large pot over medium heat. Add onion, carrots, and celery. Cook 8-10 minutes until soft. Add garlic and cook til fragrant.

  2. While the veggies are softening, add your noodles and boil according to your package directions.

  3. Pour in chicken broth. Add thyme, poultry seasoning, garlic and onion powder, salt, and pepper. Bring to a gentle simmer and cook while noodles are boiling in a separate pot.

  4. Stir in shredded rotisserie chicken and egg noodles. 

  5. Lower heat to medium-low. Stir in heavy cream and cream cheese until smooth. Warm gently 2–3 minutes—do not boil.

  6. Taste and adjust seasoning if needed.
