Rotisserie Chicken Salad with Nuts & Grapes

Creamy, crunchy, and lightly sweet—perfect for sandwiches, croissants, wraps, or served over greens. It is also perfect for standing over the bowl and shoveling it into your mouth, but that’s just me.

Ingredients

  • 2.5-3 cups rotisserie chicken, shredded 

  • 1 cup seedless grapes, halved

  • ½ cup honey roasted pecan pieces

  • ½ cup mayonnaise

  • 2 celery stalks, diced

  • 1 tsp Dijon mustard (optional, adds depth)

  • 1 tsp apple cider vinegar

  • ¼ tsp salt (plus an extra good pinch) & black pepper

  • Pinch of sugar

  • Pinch of celery salt

Directions

  1. Prep the chicken: Remove skin, then shred the rotisserie chicken into bite-size pieces.

  2. Mix the base: In a large bowl, stir together mayonnaise, Dijon, apple cider vinegar, salt and pepper, sugar and celery salt.

  3. Combine: Add chicken, grapes, nuts, and celery. Gently fold until evenly coated.

  4. Adjust & chill: Taste and adjust seasoning. Chill 20–30 minutes for best flavor.
    Serve: Pile onto croissants or toasted bread, spoon into lettuce cups, or enjoy over mixed greens.
