Crunchy Dill Cucumbers

If you're anything like me, sometimes you just need something cold, crisp, and refreshing to balance out a rich meal. These Crunchy Dill Cucumbers have become one of my favorite side dishes because they're incredibly simple to make, packed with fresh flavor, and somehow get even better after they've been sitting in the refrigerator for a few hours. They remind me of the fresh cucumber salads that always seem to disappear first at summer cookouts.

I'm serving these alongside my Root Beer Pulled Pork Patty Melt, and I couldn't think of a better pairing. The smoky, cheesy sandwich is rich and comforting, while these cucumbers bring the perfect bright, tangy crunch to every bite. Ingredients

  • 6 to 8 mini cucumbers, sliced on the diagonal

  • 1 to 2 teaspoons lemon zest

  • 3 tablespoons fresh lemon juice

  • 2 tablespoons olive oil

  • 1 to 2 tablespoons fresh dill, chopped

  • 1 teaspoon black pepper

  • 1½ to 2 teaspoons salt

  • 1 teaspoon apple cider vinegar

Directions

  1. Wash the mini cucumbers thoroughly and slice them on the diagonal into bite sized pieces.

  2. Add the cucumbers to a large mixing bowl.

  3. Add the lemon zest, fresh lemon juice, olive oil, chopped fresh dill, black pepper, salt, and apple cider vinegar.

  4. Toss everything together until the cucumbers are evenly coated with the dressing.

  5. Transfer the cucumbers to an airtight container or cover the mixing bowl.

  6. Refrigerate for at least 2 to 3 hours to allow the flavors to develop.

  7. Give the cucumbers one more toss before serving and taste for seasoning. Add an extra squeeze of lemon juice, a pinch of salt, or additional fresh dill if desired.
