Ingredients
6 slices bacon
8 ounces smoked Gouda cheese
9 large eggs
3 cups egg whites
2 cups 2% cottage cheese
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
Directions
Cook 6 slices of bacon in a skillet until browned and crispy.
Remove the bacon from the skillet, allow it to cool slightly, and chop it into small pieces.
Divide the chopped bacon into 2 equal piles. You'll use one pile for each batch of 12 egg bites.
Grate 8 ounces of smoked Gouda cheese and divide it into 2 equal piles as well.
Preheat the oven to 325°F.
In a large mixing bowl, combine the 9 eggs and 3 cups of egg whites.
Add 2 cups of 2% cottage cheese to a blender and blend until completely smooth and creamy.
Add the blended cottage cheese to the egg mixture.
Add the salt, black pepper, garlic powder, and onion powder.
Whisk everything together until the egg mixture is smooth and well combined. For easier pouring, transfer the mixture to a large bowl or measuring container with a pour spout.
Divide one pile of chopped bacon and one pile of grated smoked Gouda evenly among 12 egg bite molds.
Pour the egg mixture into each mold. Fill them almost to the top, but don't fill them completely because the egg bites will expand as they bake.
Bake at 325°F for 28 to 31 minutes, or until the egg bites are set.
Remove from the oven and allow them to cool slightly before removing them from the molds.
Repeat with the remaining bacon, smoked Gouda, and egg mixture to make the second batch of 12.
