Sweet Potato Shepherd's Pie
This Sweet Potato Shepherd's Pie is a cozy twist on the classic comfort food favorite. Instead of traditional mashed potatoes, this version is topped with creamy mashed sweet potatoes that add just the right amount of natural sweetness to balance the rich, savory beef filling. Every bite is loaded with seasoned ground beef, tender vegetables, a flavorful gravy, and a golden Parmesan-topped sweet potato crust.
The filling starts with lean ground beef cooked with onions, garlic, Worcestershire sauce, tomato paste, and Better Than Bouillon for a deep, rich flavor that tastes like it's been simmering for hours. A simple cornstarch slurry thickens the beef broth into a silky gravy that coats every bite, while peas and carrots add color and a touch of sweetness.
The mashed sweet potatoes are what truly make this dish special. Heavy cream, butter, and Parmesan cheese create a rich, velvety topping that pairs perfectly with the savory filling underneath. As the casserole bakes, the Parmesan develops a beautiful golden crust that adds even more flavor.
This is the perfect meal for chilly evenings, Sunday suppers, meal prep, or anytime you're craving classic comfort food with a delicious twist.

4 extra-large sweet potatoes, peeled and cubed
½ cup heavy cream
4 tablespoons butter

While the sweet potatoes cook, heat a large skillet over medium-high heat and brown the ground beef.
Add the diced onion, onion powder, garlic powder, seasoning salt, and black pepper. Cook until the onion is softened.
Stir in the tomato paste and Better Than Beef Bouillon. Cook for about 4 minutes, stirring frequently, until the tomato paste has caramelized.
Add the minced garlic and Worcestershire sauce and cook for 1 minute.
In a small bowl, whisk together the beef broth and cornstarch until smooth.
Pour the broth mixture into the skillet and stir until the sauce thickens.
Stir in the peas and carrots and reduce the heat to low while preparing the topping.
In a large mixing bowl, combine the cooked sweet potatoes, heavy cream, butter, black pepper, Parmesan cheese, and salt.
Beat or mash for 3 to 4 minutes until smooth and creamy.
Spread the beef mixture evenly into a baking dish.
Sprinkle a layer of Parmesan cheese over the meat mixture.
Spread the mashed sweet potatoes evenly over the top.
Finish with another generous sprinkle of Parmesan cheese.
Bake for 30 minutes, or until heated through and the top is lightly golden.
