• 2½ cups chicken broth or beef broth

• 12 ounces uncooked penne pasta

• 1½ cups shredded mozzarella cheese

• ½ cup shredded provolone cheese or Italian blend cheese

• ½ cup mini pepperoni slices

• ¼ cup grated Parmesan cheese

Directions

  1. Preheat the oven to 375 degrees.

  2. In a large oven safe Dutch oven or deep skillet, cook the Italian sausage over medium heat until browned, breaking it into crumbles as it cooks. Drain any excess grease if needed.

  3. Add the onion, green bell pepper, mushrooms, and garlic. Cook for 3 to 4 minutes, stirring occasionally, until the vegetables begin to soften.

  8. Transfer the pot to the oven and bake uncovered for 10 to 15 minutes, or until the cheese is melted, bubbly, and lightly golden around the edges.

  9. Remove from the oven and allow the pasta to rest for about 5 minutes before serving.
