One Pot Marry Me Chicken with Gnocchi

Ingredients

  • 1½ lbs boneless, skinless chicken breasts, cut into thin strips

  • Salt, black pepper, and onion powder applied generously to chicken

  • 1.5 teaspoon Italian seasoning

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • ½ cup sun-dried tomatoes (oil-packed), sliced

  • 1 cup chicken broth

  • 1 cup heavy cream

  • 1 pound potato gnocchi

  • ½ cup freshly grated Parmesan cheese

  • Fresh basil for garnish

Directions

  1. Season chicken with salt, pepper, onion powder and Italian seasoning.

  2. Heat olive oil in a large deep skillet or Dutch oven over medium-high heat. Add chicken and sear for 3–4 minutes per side until golden (it does not need to be fully cooked). Remove chicken and set aside.

  3. In the same pan, add garlic, sun-dried tomatoes. Sauté for 30–60 seconds until fragrant.

  4. Pour in chicken broth and scrape up any browned bits from the bottom of the pan. Stir in heavy cream and bring to a gentle simmer.

  5. Add gnocchi and return chicken along with any juices to the pan. Stir, cover, and simmer for 4-5 minutes, stirring once or twice, until gnocchi is tender and chicken is fully cooked.

  6. Stir in Parmesan cheese until melted and creamy.

  7. Taste and adjust seasoning as needed.

  8. Garnish with fresh basil and serve warm.
