Creamy Beef Stroganoff Gnocchi

If you love the cozy flavors of beef stroganoff, this Creamy Beef Stroganoff Gnocchi is a delicious way to change things up! Tender gnocchi, savory ground beef, and baby bella mushrooms come together in a rich, creamy sauce for a comforting dinner the whole family can enjoy.

The best part is that everything cooks in one pot. The gnocchi goes straight into the flavorful beef broth, so there’s no separate pot of water to boil and no extra colander to wash. A bag of frozen chopped onions keeps prep simple, and ground beef makes this an easy meal to put together on a busy evening.

The mushrooms add a hearty texture, while Worcestershire sauce and Better Than Bouillon give the sauce plenty of savory flavor. At the end, heavy whipping cream and sour cream make everything rich and creamy. Give the finished dish a few minutes to cool and thicken, then serve it up warm!

This is the kind of dinner I love when the weather turns cool and everyone is ready for something cozy. Add a simple vegetable or a piece of bread on the side, and you have a meal that feels right at home on the family dinner table.

Ingredients

  • 1–1½ pounds lean ground beef

  • 1 bag frozen chopped onions

  • 16 ounces baby bella mushrooms, sliced

  • 3 cloves garlic, minced

  • 1 tablespoon Better Than Bouillon beef base

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ teaspoon black pepper

  • ½ teaspoon smoked paprika

  • A good pinch of salt

  • 2 cups beef broth

  • 1 package (16 ounces) gnocchi

  • 1 cup heavy whipping cream

  • ¾ cup sour cream

Directions

  1. Add the lean ground beef to a Dutch oven or large pot over medium heat. Cook, breaking it apart with a spoon, until browned and cooked through. Drain any excess grease if needed.

  2. Add the frozen chopped onions and sliced baby bella mushrooms to the pot. Stir everything together and cook for 5–7 minutes, until the onions and mushrooms are tender. The mushrooms will release some moisture as they cook.

  3. Add the minced garlic, Better Than Bouillon beef base, Worcestershire sauce, garlic powder, onion powder, black pepper, smoked paprika, and a good pinch of salt. Pour in the beef broth and stir well, scraping up the browned bits from the bottom of the pot.

  4. Add the gnocchi and stir to combine. Cover the pot and cook for 6–7 minutes, or until the gnocchi is tender.

  5. Reduce the heat to low and stir in the heavy whipping cream and sour cream until everything is well combined. Allow the dish to cool slightly so the sauce can thicken.

  6. Spoon into bowls and serve warm. Enjoy!

Tips for Serving and Storing

The sauce will continue to thicken as the gnocchi sits. If it becomes thicker than you like, stir in a splash of beef broth to loosen it. When adding the sour cream, keep the heat low and stir gently to help the sauce stay smooth.

This dish is hearty enough to enjoy on its own, but green beans, roasted carrots, or a simple salad would make a lovely side. A little crusty bread is delicious for scooping up any creamy sauce left in your bowl, too.

Store leftovers in an airtight container in the refrigerator and enjoy within 3–4 days. Reheat gently on the stovetop or in the microwave, adding a splash of broth if needed. The gnocchi will absorb some sauce as it sits, but it makes a tasty and comforting lunch the next day!
