Dirty-ish Rice
This is one of those recipes I make on repeat. It’s budget-friendly, forgiving, and the perfect way to use up leftover vegetables before they go to waste. From start to finish, it’s on the table in 36 minutes, making it ideal for busy weeknights when you still want something cozy and homemade.
Ingredients:
1 lb ground beef (I used lean)
1 onion diced
3 stalks of celery diced
1 bell pepper diced
3 cloves of garlic
1 tsp Tony Chachere’s, onion/garlic powder, smoked paprika
½ tsp salt, pepper, celery salt
4 cups beef broth
1 tsp Better than Bullion paste
1.5 cups rice (I used jasmine)
2 tbsp worcestershire
Directions:
Brown up 1 lb of lean ground beef. Add onion, celery, and bell pepper and cook for 5 minutes. Add in 3 cloves of garlic and saute for 1 minute or until fragrant. Add in your seasonings, beef stock, and worcestershire. Rinse the rice and add to the pot. Put on the lid and simmer for 20-25 minutes.
