Instructions

  1. Place the chicken in the bottom of your slow cooker.

  2. Sprinkle the onion powder, garlic powder, smoked paprika, cumin, and crushed red pepper flakes over the chicken.

  3. Add the ginger paste, garlic paste, honey, soy sauce, coconut milk, and chicken broth.

  4. Cover and cook on High for 2½ to 3 hours or Low for 4 to 5 hours, until the chicken is fully cooked and tender.

  5. Remove the chicken and shred it with two forks, or leave the pieces whole if preferred. Return the chicken to the slow cooker and stir to coat it in the creamy coconut sauce.

  6. Just before serving, stir in the juice of one fresh lime for the brightest flavor.
