Cheesy Taco Tater Tots (Air Fryer)

We are making Your Barefoot Neighbor’s Cheesy Taco Taters but with tater tots. Crispy tater tots loaded with cheesy taco goodness—this is an easy weeknight win and perfect for sharing.

Ingredients

  • 1 bag frozen tater tots

  • 1 lb ground turkey or ground beef

  • 1 packet taco seasoning

  • 1 (10 oz) can Rotel (diced tomatoes & green chiles), undrained

  • 1 (4 oz) can diced green chiles

  • 1 can corn

  • 1½–2 cups shredded cheddar cheese

Toppings

  • Avocado slices

  • Fresh cilantro, chopped

  • Sour cream

Instructions

Cook the Tater Tots

1. Preheat the air fryer to 400°F.

2. Add frozen tater tots in an even layer and cook for 13–14 minutes, shaking halfway, until golden and crispy.

3. Brown the Meat

4. While the tots cook, heat a skillet over medium heat.

5. Add ground turkey or beef and cook until browned, breaking it up as it cooks.

6. Drain excess grease if needed.

Season & Simmer

7. Stir in taco seasoning, Rotel (with juices), ¼ cup water, green chiles, and corn.

8. Let the mixture simmer for 3–5 minutes, until heated through and well combined.

Assemble

9. Once the tater tots are crispy, spoon the meat mixture evenly over the top.

10. Sprinkle generously with shredded cheddar cheese.

Melt the Cheese

11. Return everything to the air fryer just until the cheese is melted and bubbly.

Finish & Serve

12. Top with avocado slices, fresh cilantro, and a dollop of sour cream.

13. Serve immediately and enjoy!
