1 tablespoon Better Than Bouillon Chicken Base
4 ounces cream cheese
1 pound diced ham
2 cups shredded sharp cheddar cheese, divided
Sliced green onions, for garnish
Directions
Melt the butter in a large skillet over medium-high heat.
Add the frozen diced potatoes and frozen onions. Cook for 10 to 12 minutes, stirring occasionally, until the potatoes begin to brown and the onions have softened.
While the potatoes are cooking, whisk together the cream of chicken soup, heavy whipping cream, Dijon mustard, garlic powder, onion powder, smoked paprika, salt, pepper, and Better Than Bouillon Chicken Base in a medium mixing bowl until smooth.
Add the cream cheese to the skillet and stir until it has completely melted into the potatoes.
Pour the soup mixture into the skillet and stir well to coat the potatoes.
Add the diced ham and 1 cup of the shredded cheddar cheese. Stir until everything is well combined and the cheese has melted into the sauce.
Sprinkle the remaining cup of cheddar cheese evenly over the top. Cover the skillet for 2 to 3 minutes, or until the cheese is melted and bubbly.
